INGREDIENTS
- Cauliflower - 100 gms
- Beans - 100 gms
- Carrots - 100 gms
- Sweet Corn - 100 gms
- Capsicum - 100 gms
- Garlic - 2 tbsp (Optional; Finely Chopped)
- Coriander - 3 tbsp 9Finely Chopped)
- Green Chillies - 1 tbsp (Optional; Finely Chopped)
- Canned Cherries - 15-20 (Optional)
- Oregano - 1 tsp
- Chilli flakes - 1 tsp (Optional; Or as per taste)
- Salt (To Taste)
- Cheese - 300-350 gms (Grated)
- Milk (Warm) - 1 ltr
- Wheat Flour/Maida - 3 tbsp
- Butter/Olive Oil - 150 gms/ml
PROCEDURE
- Boil/blanch all vegetables except Capsicum till 3/4 cooked, drain and keep aside
- In a pan take Butter, add garlic and put on flame till light golden brown in colour and keep aside
- Take Butter/Olive Oil in a pan and roast the Flour till golden in colour
- Pour warm milk to the Flour mixture and keep stirring to avoid making lumps
- Add Chilli Flakes, Oregano, Salt, Coriander, Garlic, Boiled Vegetables, Capsicum, Canned Cherries and cook for 2-3 minutes
- Add 150 gms Cheese and mix well
- Take it out in a microwaveable flat dish and layer the top with a thick layer of cheese and garnish with Coriander and Green Chillies
- Keep it in microwave till a golden crust is formed
NOTE:
- Serve hot with Garlic Bread, Masala Bread or Plain Parathas
- Use the water drained from vegetables as stock to make soups or curries to avoid nutrient wastage
